One of the two main subspecies of garlic, hardneck garlic is easy to grow and has outstanding flavor. It is well-adapted to cooler climates, thriving in areas with colder winters but can also grow well as far south as northern Texas. With thick skins and larger cloves, hardneck garlic cloves are much easier to peel than your typical garlic.

Hardnecks are appropriately named for the thick stalk that grows at the center of their bulbs. Later in the growing season, this stalk shoots up a flowering stem called a garlic scape. These edible delicacies are delicious & should be snapped off once curled to produce bigger bulbs. See our Garlic Scape Blog for more information.

Hardneck garlic can be classified into a handful of different families of garlic. Purple Stripes have more cloves and are milder in flavor, while Porcelains have larger cloves with robust flavor. Garlic Sampler Packs can be a fun way to try multiple varieties!

Basic Hardneck Garlic Growing Information

  • Garlic needs full sun so plan your garden accordingly.
  • Garlic prefers rich composted & well-drained soil. It is a heavy feeder so fertilize properly with a well-balanced fertilizer. See our Fertilization Soak page to see how we do it!
  • Weed regularly as garlic does not compete well with weeds. Mulch is recommended for protecting the cloves through winter, keeping the soil moisture level consistent and weeds at bay.
