Asian Tempest, Hard-neck Asiatic, is a great growing Asiatic garlic with wonderful HOT flavor. Originally from South Korea and is positively wonderful great tasting HOT garlic with great storage life. It is breathtaking if eaten raw. Asian Tempest grows well in Northern States, but does extremely well in Southern states. It is an earlier harvesting garlic. Averages about 5-6 large cloves per bulb.

Question of the Week: How should I cure my garlic?

✔ out of direct sunlight
✔ temperatures between 80°F and 110°F
✔ humidity between 45 to 50%
✔ constant airflow with fans
✔ 3-4 weeks

Every region is different in terms of temperature and humidity at this time of year, so we should all just do the best we can to get within these ranges. You don`t have to be perfect, and there are so many ways to effectively cure garlic.

Our shallot leaves have fallen over, which means it`s time to harvest!

Our red shallots are multiplier shallots — you plant one bulb and can harvest between 4-10 shallots! These bulbs may look small, but they are packed with flavor and will add a gourmet touch to your favorite meals. ❤

Reminder: Doing a test dig on a few bulbs to see how they are progressing underground is always a good way to help you decide when to harvest.

For example, this bulb has 5 green leaves remaining, with good shoulders and a nice size. It looks like it could be harvested in the next couple of days!

Question of the Week: What should I do after harvesting my garlic?

1) C U R I N G

Curing garlic is the simple process of drying garlic bulbs, which is essential for good storage. Put your garlic somewhere out of the sun and provide good airflow with fans. The curing process will take around 3 weeks - remove the fans when your garlic is finished curing. Curing is complete when there is little to no green inside the stem.

2) S T O R I N G

Whole bulbs of garlic can keep for 6-12 months or more when properly stored at the right temperature and in the correct environment. Garlic is best-stored long-term when kept at a temperature between 35°F and 55°F in an environment with 40 percent to 60 percent humidity.

Garlic needs to breathe, and it’s best to avoid storing your garlic in plastic bags or sealed containers that prevent airflow. Storing garlic uncovered, such as in a wire mesh basket inside your cupboard or beneath a small, overturned clay pot, is ideal. You can also store garlic in a paper or mesh bag. To store your garlic in the refrigerator, put your garlic bulbs in a brown paper bag and store them in the crisper drawer.

Did you forget to pick some or all of your scapes? 🧄

A sign that your garlic is nearing harvest is when the garlic scapes you forgot to pick start pointing to the sky! These curly flower stalks, if left on the plant, will straighten up as the bulbs mature.

For those growing softneck garlic, which doesn`t produce scapes, a different sign will indicate it`s almost time to harvest: the garlic will start to droop and fall over.

By paying attention to these signs, you`ll know when your garlic is getting close to being ready for harvest. Happy harvesting!

Question of the Week: Why is my garlic turning yellow?

As garlic approaches harvest time, you may notice it starting to yellow and die back. This is completely normal, so there’s no need to worry! When there are 4-5 primarily green leaves remaining, counting from the top leaf to the bottom, it means your garlic is ready to harvest. Another rule of thumb is that it`s ready when about 50% of the leaves have died back.

Keep in mind, these are general guidelines, and we can`t provide specific advice for each garden and region. The best thing you can do is to regularly check on your garlic and use your best judgment to determine the right time to harvest.

Remember, if you`re growing multiple varieties of garlic, they might be ready to harvest at different times. 🧄

Always let your plants tell you when they`re ready to harvest. As you can see, some of these are ready to be harvested and some should wait a bit longer.

A few things we look for are:

✔ 4 to 5 green leaves remaining
✔ Good shoulders
✔ Fully-formed bulb
✔ A healthy bulb not sitting in saturated soil
